The Bread: Cracking the Crust
We’ll start with the ultimate French icon: the Baguette. I’ll show you how to achieve that signature golden crunch and airy center. Then, we’ll move on to my personal favorite—Fougasse. Think of it as the artistic, leaf-shaped cousin of the baguette, generously stuffed with briny olives and brushed with fragrant olive oil.
The Pastry: The Magic of "Rough Puff"
Next, we’re diving into the world of laminated dough. I’m going to teach you my secret to a "Rough Puff" pastry. It’s buttery, flaky, and impressive, but far more user-friendly than traditional puff pastry! Once you master this technique, you’ll never go back to store-bought.
The Grand Finale: Sweet & Savoury Galettes
Using your handmade pastry, we will create two rustic, free-form galettes:
The Apple Galette: A seasonal showstopper. When served warm with a dollop of vanilla ice cream, it is the undisputed king of desserts!
The Savoury Galette: A delicious twist for lunch or dinner, topped with roasted seasonal vegetables and melty, artisanal cheese. Yummy!
