Baking course in Tuscany 2012

Join us for a 5 day baking course in Villa Boccella, Tuscany in April 2012


This is a great opportunity to learn how to bake bread in beautiful settings. Each day will be centered around a theme and hands-on classes will take you through all the stages of bread baking until you have mastered it and feel confident to make the recipes at home.

 


The 5 day course will cover:
  • Working with sourdough, fresh and dried yeast and a biga.
  • Starting and maintaining your own sourdough leavens
  • All the stages in bread making: mixing, kneading, folding and shaping a loaf, proving and baking
  • Temperature control and how to adjust it
  • Baking in a traditional wood-fired oven
  • Making traditional Italian cookies and tarts
  • Pasta making – including ravioli and tagliatelle

 

We will be making 100% sourdough loaves, breads using both sourdough and fresh yeast as well as fully yeasted breads. Students will make focaccia, ciabatta, grissini, pizza and sourdough bread using a rye starter. In addition we will be making sweet things such as pignoli and cantuccini cookies and lemon tarts.

The course runs from the 8th April – 13th April, 2012

 

Price
The price is £750 per person
The fee includes 5-days tuition, extensive course notes and recipes, all ingredients, 1 banneton (bread proving basket), an embroidered Bake with Maria apron, 5-nights accommodation, breakfast and lunch on all 5 days as well as 3 evening meals.

Participants should arrive on Sunday the 8th April 2012, in time for the evening meal. Departure is after the last class on the Friday, unless you want to extend your stay.
